Bringing a little part of Scotland to Boulder was the vision that I held in my mind. I’ve always noticed the many Irish pubs around the USA (a few that my husband Robert and I often frequent) but hadn’t come across a Scottish pub and felt that Scotland needed to be represented too.
I wished for a Scottish Gathering Place where people could come for a pint of imported Scottish ale, an Irn Bru or to savour a single malt whisky. Scottish pubs are like a ‘Home Away From Home’ and that is what I wanted to create, a place where each individual feels comfortable, like being part of the family.
Many American people are extremely proud to have roots or heritage in Scotland, some of whom can date their ancestors back hundreds of years. There is a large Scottish community in the Boulder/Denver area so the pub serves as a ‘Link to Scotland’ for those who have not yet taken a trip ‘back.’
Since the pub has opened, members of various Scottish Clans love to visit the pub, wearing kilts and they enjoy talking about the ‘Old Country.’ Others just love to visit Scotland so there are many conversations about the many beautiful castles they have visited, or indeed stories of all the whisky tasting that was done! … Then we have the golfers! Coming from the ‘Home of Golf’ (St. Andrews) our family is only too happy to talk about the famous Old Course and of the many other courses which may not be as famous but are just as breathtaking and challenging.
Situated on the corner of a modern building, our pub is not of the ‘Olde Worlde’ design, but that of an elegant 21st century pub found in Edinburgh or Glasgow. Also modern about the pub is our vegetarian/vegan cuisine incorporated into our traditional Scottish fare menu. With two separate kitchens, we are able to prepare the vegetarian dishes completely isolated from the non-vegetarian food. As a vegetarian myself, I feel at ease knowing that our food is prepared with quality ingredients and the utmost care. The home-style food, whether it be vegetarian or not, will certainly remind you of Granny and Mum.
